Cran-Raspberry Jello Dessert

Cran-Raspberry Jello

1 ½ c boiling water
1 pkg. Raspberry jello (6oz)
1 can cranberry sauce (16 oz)
1 ½ c cold water
1 can mandarian orages (11-15oz) drained
1 ½ c smashed gram crackers
½ c sugar-divided
½ c melted butter
1pkg (8 oz) cream cheese softened
2 (8oz) tubs cool whip-divided

Stir boiling water and jello 2 mins, then add cranberry sauce. Stir until melted and mixed well(takes a few minutes) Then add cold water. Put in fridge until slightly thick (about 1-2 hours) then add oranges.

Make crust w ¼ c sugar, graham crackers and butter. Press in to large cake pan. Then freeze

Beat cream cheese with sugar until smooth. Stir in 1 tub of cool whip.

Top crust with cream cheese mixture (put it in fridge until you add oranges to jello), then top cream cheese mixture with jello mixture. Refrigerate over night. Then top with whip cream and enjoy.

Sweet Potatoes

Famous Sweet Potatoes

Karo Syrup
Brown Sugar
Butter
Mini Marshmellows
Yams/Sweet Potatoe

Anyway at the store they are by the potatoes... I beleive they are actually called yams... the reddish/orange odd shaped ones. Try to get the most smooth/egg looking shape, the ones with little twists or curves are harder to peel. (i hope that made sense). Anyway about 3 med/lrg for a small square pan.

Peel them, dice them, boil them until soft like you would mashed potatoes. Then drain and mash either in bowl or pan with a fork or potatoe masher. You really don't want any chunks.

Then put in baking dish.

Get your corn syrup and pour it over the top... I have no real measurement. just the majority needs to be covered.

Then get brown sugar and sprinkle very generously over the top. (More is better than less on the karo and brown sugar)

Sliver some butter on top of that, every few inches.

Top with a thick layer of mini marshmellows.

Heat in oven at 350 for about 20 minutes or until marshmellows are puffy and lightly toasted.

Apple Snack Cake

1 cup flour
1 cup plus 2 tsp sugar, divided
2 tsp baking powder
4 egg whites, beaten
1 tsp vanilla
2 cups chopped and peeled tart apples
1/4 cup chopped walnuts or pecans toasted
1/2 tsp ground cinnamon

Mix flour, 1 cup sugar and baking powder. Add eggs whites and vanilla; mix well. Fold in apples and nuts. Spread into a greased 9 in. square pan. Combine cinnamon and remaining sugar; sprinkle over top.

Bake at 350 for 30-35mins or until a toothpick comes out clean.

Hawaiian Chicken :)

This recipe is a freezer meal recipe and is yummy!

2 pounds boneless skinless chicken breast
1 (1.25) envelope onion soup mix
1 cup pineapple apricot jam
1 cup Russian salad dressing

Cut chicken into strips. Arrange chicken in greased baking dish. Bake 20 minutes at 350. Pour off liquid. Combine onion soup, jam and dressing. Pour over chicken. Bake uncovered for 30 minutes at 350. Remove from oven and allow to cool. Place in freezer bag. Lavel and freeze. 6 serviings.

To serve: Thaw. Heat until hot and bubbly. Serve with rice.

This recipe ma be frozen Prior to baking. Bake chicken 20 minutes and pour off liquid. Place chicken and sauce in freezer bag. Label and freeze.
To serve: Thaw. Bake uncovered at 350 for 45 minutes.

Baked Potato Soup

1/4 C butter
1/4 c chopped onion
1/4 c. flour
1 can chicken broth
1 can evaporated Milk
2 lrg or 3 med. baked potatoes (cooked)
crumbled bacon, shredded cheddar cheese, sliced green onions
salt and pepper

Melt butter in lrg pan over medium heat. Add onion, cook stirring occasionally for 1-2 mins. Stir in flour. Stir in broth and milk. Add pulp from potatoes and mash (will be chunky) into mixture until comes to a boil. You can either set out rest of ingredients to have them top themselves or you can do what I do. Add a large handful or two of cheese, salt, pepper, a handful of onions and bacon, mix until cheese is melted and serve with rolls.

Makes 4-5 servings, so double if feeding big appetites.

Bird's Nest Pie

1 8ounce pkg spaghetti noodles
2 eggs, beaten
1/3 cup canned parmesan cheese
1/3 tbps melted butter
1tbsp dried parsley flakes
1 cup sour cream
1 3ounce pkg softened cream cheese
1 cup shredded Mozzarells cheese
1 pound italian sausage
1/2 cup chopped onion
1 6 ounce italian tomato paste
1cup water

cook spaghetti noodles in boing, salted water for the shrotest time recommended on package. Drain. Mix warm spaghetti with eggs, parmesan, butter and parsely. Press into a greased foil pie pan. Mix sour cream and cream cheese. Spread on top of spaghetti crust. Sprinkle with Mozzarella. Brown Sausage with onion. Add tomato paste and water. Simmer 10 minutes. Pour on top of cheese. Cover with extra heavy foil. Lavel and freeze.

To serve: Thaw Bake covered for 45 minutes at 350 . Uncover. Top with Mozzarella cheese. Bake 5 minutes

Taco Pie

Okay, I haven't tried this one yet. It is in my freezer to try

1 pound lean ground beef
1 cup chopped onion
1 (1.25 ounce)envelope taco seasoning
1 (2.25 ounce) can sliced black olives
1 (8 ounce) can tomato sauce
1 (8-ounce) can refrigerated crescent roll dough
1 cup refried beans
2 cups shredded Cheddar cheese, divided
1 (10 1/2 ounce) bag corn chips, coarsely crushed
1 cup sour cream

Brown ground beef with onion. Add taco seasoning, drained olives and tomato sauce. Unroll crescent roll dough and press together perforations. Press onto bottom and up sides of a foil baking pan. Heat refried beans and mix with 2 tbsp of water to make spreadable. Spread over crust. Top with 1 cup of cheese. Cover crust with half of the crushed corn chips. Spoon meat mixture over corn chips. Cover with sour cream. Sprinkle with reamining 1 cup of cheese. Top with remaining corn chips. Cover with extra heavy foil. Lavel and Freeze. (use throw away foil pan for easy use) 8 servings

To Serve: Rhaw. Bake uncovered 45 minutes at 375

Taco Soup

1 pound ground beef
1 cup chopped onion
1/2 c chopped green bell pepper
1 tsp minced garlic
2 (15 ounce) cans pinto beans
2 (14.5 ounce) cans diced tomatoes
1 cup water
1 (4 ounce) can diced green chiles
1 (8 ounce) can tomato sauce
1 (1.25 ounce) envelope taco seasoning

Brown ground beef with onion. Add bell pepper, garlic, undrained beans, tomatoes, water, green chilies, tomato sauce and taco seasoning. Heat to boiling. Reduce heat and simmer 1 hour. Allow to cool. Place in freezer bag or container. Lavel and freeze. 6 servings.

To Serve: Thaw. Heat until hot and bubbly. Serve with tortilla Chips. (I added a dolup of sour cream and a large handful of shredded cheese and heated then served)

Note: Julie I know the tomato issue, maybe crushed tomatoes instead of diced.

Cheesy Soup

3 Qts. Water
1 chopped onion
2 cups chopped Celery
2 cups chopped Carrots
2 cups chopped Potatoes
Chopped chicken
12 cubes Chicken Boullion (or sub water with Chicken Broth)
Lrg Jar Cheese Whiz
1 1/2 cup flour
3 cubes butter

Note*** I half recipe and add brocolli

Boil water and boullion, add veggies and chicken until tender and cooked
In seperate pan melt butter, then add flour and mix with butter
add to veg. mixture and stir until smooth. Add larg jar cheese whiz
at very end can add peas.

serve with rolls....this is Isaah's favorite.

Beefy Spanish Rice

1 pound ground beef
1 cup chopped onion
1/2 cup chopped green bell pepper
1 tsp minced garlic
2 tbsp butter
1 cup uncooked rice
2 1/2 cups beef broth
1 tsp salt
2 tsp sugar
1 tsp chili powder
1/4 tsp pepper

Brown ground bef with onion, bell pepper and garlic. Remove from skillet. Melt butter in skillet and stir in rice. Cook and stir rice for about 5 minutes, until golden. Retoun beef and vegetables to pan. Add beef broth, slat, sugar, chili powder and pepper. Cover and simmer about 30 minutes, stirring occasionally. Allow to cool. Place in freezer bag. Label and freeze 6 servings.

To serve: Thaw. Heat through.

I served as tacos with refried beans, and the next day we topped with salsa and ate with tortilla chips for lunch.

****Note write with permanent marker on bag what is in there/date/ and how to cook before adding beef mixture. Saves time on figuring out how to cook at last minute.

Easy Pleasy Chicken

6 boneless, skinless chicken breasts
6 slices deli ham
6 slices Swiss cheese
1 can cream of chicken soup
1 cup sour cream

Place chicken in 9x13 pan coated with cooking spray.
Lay ham and cheese slices over each piece of chicken.
Mix soup and sour cream. Spread over chicken.
Bake uncovered for 45 minutes at 375.
Can serve with rice or noodles.

Smothered Burritos

1 pkg frozen bean burritos
1can cream of chicken
1 soup can of milk
4 oz green chilies
1 1/2 cups sour cream (I have used less)
1 lb cheddar cheese grated (or what you have on hand)

Preheat oven to 350. Put burritos in 9x13 greased pan. Mix remaining ingredients and pour evenly over top. Bake for one hour. *** You can used thawed burritos and cut the baking time down to 25-30 minutes.

Brownie Triffle

1 box of brownies, made according to directions on box, cooled
1 lrg box instant choc pudding
1 lrg box instant vanilla pudding
Chopped Heath or Skor bars (2-4)
Large container thawed whip cream

Mix puddings together and follow directions on boxes to prepare

Crumble 1/2 of pan of brownies in bottom of bowl, sprinkle heavily with 1/2 of heath bar, top with 1/2 of pudding mixture, then add a layer of whip cream.
Repeat above.

Refigerate overnight. You want all the layers to soak into each other.

German Pancakes

4 large eggs
1 cup flour
1 cup milk
1/4 tsp salt
6-8 tbsp melted butter

Preheat oven to 425. In a 9x13 pan pour melted butter. In a blender mix all other ingredients. Pour into buttered pan. Cook faor 15-20 minutes or until puffy and golden brown.
Sprinkle with powdered sugar.

3 ways to eat it: plain fresh out of the oven, dipped in syrup, or topped with fresh strawberries

Blueberry Breakfast Cake- Juli

1 C Sugar
1/3 C oil
1 C mashed ripe bananas
1/2 c yogurt (I have used numerous different flavors)
1 tsp vanilla
2 eggs
2 C flour
1 tsp baking soda
1/2 tsp salt
1 C fresh or frozen blueberries
(I also use the frozen berry mix with blueberries, strawberries and raspberries, which I prefer better, I blend in food processer with banana's so it's one fruity mess)

beat together sugar and oil, add yogurt, vanilla and eggs; blend well. Add bananas (or fruit mixture). Add flour, baking soda, salt and stir until dry ingredients are moistened. Stir in blueberries.

Pour into 3 greased and floured mini loaf pans. Bake at 350 for 35-45 minutes or until cooked through. Cool 5 minues before removing from pan.

Bow Tie Pasta Salad-Jenni

1 can Pineapple Tidbits
3 Apples chopped (optional)
4 cups chicken breast shredded or chopped (boil with bay leaf)
1 1/2 c halved grapes (preferably red)
1 cup slivered Almonds
16 oz. Coleslaw Dressing (use 1/2)
1 cup Mayo
4 stalks green onions diced
1 box cooked Bow Tie Pasta
Salt to taste

Mix mayo and coleslaw dressing, then in very large bowl mix chicken, pasta, onions and dressing mix. Chill for 2 hours then add fruit and almonds.

Enjoy, this is very addicting and makes a lot. Refridgerate leftovers and enjoy!

Homemade Rolls - Jody

Homemade Rolls

Step 1:
In seperate bowl, let sit.
2 TBS yeast=2 packets
2 C. warm water
1/3 C. sugar

Step 2:
1 Cube butter, soft
2 tsp. salt
2/3 C. powdered dry milk
1 Egg
3 C. Flour
1/3 C. sugar
Combine and then add in yeast mixture. Then add 2-3 cups more of flour - will be a little sticky.
Rise in mixing bowl for 1 hour. Then roll into circles and cut with pizza cutter into little triangles (like cutting a pie) and roll up. Let rise while you cut out all the dough.
Then melt some butter and butter the uncooked dough. Bake at 350 for 12-15 minutes. Then butter again as soon as they come out of the oven.

I will be putting on only recipes that I have tried and enjoy, so never fear, I won't be letting you try them out first, my family gets to be the guinae pigs! So enjoy!
