Baked Potato Soup

1/4 C butter
1/4 c chopped onion
1/4 c. flour
1 can chicken broth
1 can evaporated Milk
2 lrg or 3 med. baked potatoes (cooked)
crumbled bacon, shredded cheddar cheese, sliced green onions
salt and pepper

Melt butter in lrg pan over medium heat. Add onion, cook stirring occasionally for 1-2 mins. Stir in flour. Stir in broth and milk. Add pulp from potatoes and mash (will be chunky) into mixture until comes to a boil. You can either set out rest of ingredients to have them top themselves or you can do what I do. Add a large handful or two of cheese, salt, pepper, a handful of onions and bacon, mix until cheese is melted and serve with rolls.

Makes 4-5 servings, so double if feeding big appetites.

Bird's Nest Pie

1 8ounce pkg spaghetti noodles
2 eggs, beaten
1/3 cup canned parmesan cheese
1/3 tbps melted butter
1tbsp dried parsley flakes
1 cup sour cream
1 3ounce pkg softened cream cheese
1 cup shredded Mozzarells cheese
1 pound italian sausage
1/2 cup chopped onion
1 6 ounce italian tomato paste
1cup water

cook spaghetti noodles in boing, salted water for the shrotest time recommended on package. Drain. Mix warm spaghetti with eggs, parmesan, butter and parsely. Press into a greased foil pie pan. Mix sour cream and cream cheese. Spread on top of spaghetti crust. Sprinkle with Mozzarella. Brown Sausage with onion. Add tomato paste and water. Simmer 10 minutes. Pour on top of cheese. Cover with extra heavy foil. Lavel and freeze.

To serve: Thaw Bake covered for 45 minutes at 350 . Uncover. Top with Mozzarella cheese. Bake 5 minutes

Taco Pie

Okay, I haven't tried this one yet. It is in my freezer to try

1 pound lean ground beef
1 cup chopped onion
1 (1.25 ounce)envelope taco seasoning
1 (2.25 ounce) can sliced black olives
1 (8 ounce) can tomato sauce
1 (8-ounce) can refrigerated crescent roll dough
1 cup refried beans
2 cups shredded Cheddar cheese, divided
1 (10 1/2 ounce) bag corn chips, coarsely crushed
1 cup sour cream

Brown ground beef with onion. Add taco seasoning, drained olives and tomato sauce. Unroll crescent roll dough and press together perforations. Press onto bottom and up sides of a foil baking pan. Heat refried beans and mix with 2 tbsp of water to make spreadable. Spread over crust. Top with 1 cup of cheese. Cover crust with half of the crushed corn chips. Spoon meat mixture over corn chips. Cover with sour cream. Sprinkle with reamining 1 cup of cheese. Top with remaining corn chips. Cover with extra heavy foil. Lavel and Freeze. (use throw away foil pan for easy use) 8 servings

To Serve: Rhaw. Bake uncovered 45 minutes at 375

Taco Soup

1 pound ground beef
1 cup chopped onion
1/2 c chopped green bell pepper
1 tsp minced garlic
2 (15 ounce) cans pinto beans
2 (14.5 ounce) cans diced tomatoes
1 cup water
1 (4 ounce) can diced green chiles
1 (8 ounce) can tomato sauce
1 (1.25 ounce) envelope taco seasoning

Brown ground beef with onion. Add bell pepper, garlic, undrained beans, tomatoes, water, green chilies, tomato sauce and taco seasoning. Heat to boiling. Reduce heat and simmer 1 hour. Allow to cool. Place in freezer bag or container. Lavel and freeze. 6 servings.

To Serve: Thaw. Heat until hot and bubbly. Serve with tortilla Chips. (I added a dolup of sour cream and a large handful of shredded cheese and heated then served)

Note: Julie I know the tomato issue, maybe crushed tomatoes instead of diced.

Cheesy Soup

3 Qts. Water
1 chopped onion
2 cups chopped Celery
2 cups chopped Carrots
2 cups chopped Potatoes
Chopped chicken
12 cubes Chicken Boullion (or sub water with Chicken Broth)
Lrg Jar Cheese Whiz
1 1/2 cup flour
3 cubes butter

Note*** I half recipe and add brocolli

Boil water and boullion, add veggies and chicken until tender and cooked
In seperate pan melt butter, then add flour and mix with butter
add to veg. mixture and stir until smooth. Add larg jar cheese whiz
at very end can add peas.

serve with rolls....this is Isaah's favorite.
