This is one of those recipes off of pinterest. I love them. I make them all the time and then freeze them and warm them up for lunch.
1 chopped onion
1 can black beans, drained and rinsed
1 1/2 cups cooked rice (we use brown and it tastes great)
2-3 cups shredded cooked chicken
1 cup shredded cheddar or mont. jack cheese (or combo)
1/2 c finely chopped cilantro
salt and pepper
1/4 cup canola oil
(The origianl calls for 1-2 tsp minced canned chiles in adobo sauce, but I don't use it, to much of a hastle for it and it is a little spicy)
Preheat oven to 450.
Coat pan and brown onions and add everything but cheese and cilantro until heated. After heated add cheese and cilantro and add salt and pepper to taste. Mix well.
Stack tortillas and cover w/damp paper towel and microwave until warm and pliable. Grease large baking dish. Put mixture in tortillas and wrap. Brush tortillas with left over oil. Bake for 8-10 mins until golden and crisp. Top with salsa, veggies, sourcream, salsa, quacomole...
Let cool in fridge before freezing for best results. (If you don't eat them all first)

Homemade Egg Noodles
2 cups flour
1 tsp salt
Mix together
Then make a hole in center of mixture and add 3eggs, 1 tbsp oil, 2 tbsp water (in hole).
Mix until forms a ball, You may need to add another tbsp water or 2. You don't want it sticky.
Kneed on floured surface. Then let sit for 10 minutes covered.
Roll out thin (they will grow fatter in the water). Slice with pizza cutter.
Either add to warm soup and reheat or dry on counter and store in a ziplock bag for later.

10 cups water or chicken broth (use chick boullion using water)
1/2 cup diced onion
1-2 cloves minced garlic
1 bay leaf
1/2 tsp parsley
2-3 chicken breasts
Chopped carrots and celery
Mix everything together and boil. When chicken is done take out and shredd then place back and add noodles. Enjoy.

Mini Brownie Cups
Mini Brownie Cups
1/2 c. Milk
1 sm. pkg. white chocolate pudding
8 oz. cool whip
4 oz. cream cheese
Brownies
toffee chips
Make brownies (according to package) in small muffin pan for 15 min. While cooling push down the middles, then let cool all the way (can put in fridge). Fill with the filling and sprinkle toffee chips on top.
