This is one of those recipes off of pinterest. I love them. I make them all the time and then freeze them and warm them up for lunch.
1 chopped onion
1 can black beans, drained and rinsed
1 1/2 cups cooked rice (we use brown and it tastes great)
2-3 cups shredded cooked chicken
1 cup shredded cheddar or mont. jack cheese (or combo)
1/2 c finely chopped cilantro
salt and pepper
1/4 cup canola oil
(The origianl calls for 1-2 tsp minced canned chiles in adobo sauce, but I don't use it, to much of a hastle for it and it is a little spicy)
Preheat oven to 450.
Coat pan and brown onions and add everything but cheese and cilantro until heated. After heated add cheese and cilantro and add salt and pepper to taste. Mix well.
Stack tortillas and cover w/damp paper towel and microwave until warm and pliable. Grease large baking dish. Put mixture in tortillas and wrap. Brush tortillas with left over oil. Bake for 8-10 mins until golden and crisp. Top with salsa, veggies, sourcream, salsa, quacomole...
Let cool in fridge before freezing for best results. (If you don't eat them all first)
